The La Jolla Chapter of the not-for-profit Confrérie de la Chaîne des Rôtisseurs is a dynamic group of food and wine enthusiasts, in excess of 150 members, with discerning palates who share a common interest in a passion for fine cuisine and wines based in education, camaraderie and fun around the table.

La Jolla Bailliage unites professional and amateur gastronomes in a private not-for-profit society.


The benefits of becoming a member of the La Jolla Bailliage  include access to the international camaraderie, attendance at extraordinary dinners San Diego County and throughout the world, gourmet travel offerings at home and abroad, an opportunity to represent the U.S. Chaîne as recognition as a member in Paris, and a worldwide network of professional members.

National Membership includes a subscription to the U.S. Chaîne des Rôtisseurs Gastronome, a full color high-quality magazine that reports on culinary events around the country and provides a calendar of forthcoming opportunities. Members also receive an annual guide to Chaîne-affiliated restaurants, hotels and cruise ships, all of whom are entitled to display the Chaîne plaque – a symbol of culinary excellence recognized around the world. Fellow members can anticipate being made especially welcome when patronizing Chaîne membership establishments.


  • La Jolla Bailliage (chapter) dues is collect each year by the Bailli along with yearly dinner costs and dates for the 3 formal events that are planned. If you cannot make a date within the fiscal year, you may bring complementary guests to either of the other 2 other events. Additional optional dinners are sometimes planned for smaller groups on a first come first served basis with venues and costs announced at the time.
  • National dues are set by Chaîne des Rôtisseurs National Office each year and mailed directly from the national office.

For all, it offers opportunities to meet people who share a common interest in fine dining, fine wines and good fellowship. The La Jolla Bailliage is associated with the Confrérie de la Chaîne des Rôtisseurs, Bailliage des Etats-Units, which is a national chapter of a global organization with the international headquarters in Paris, France. Société Mondiale Du Vin Société Mondiale du Vin is the wine affiliate organization of the Confrérie de la Chaîne des Rôtisseurs whose focus is the appreciation of wine and crafted beverages. The Société Mondiale du Vin encourages the collection and dissemination of information on wines and quality spirits as well as enjoyment, understanding and procurement of fine beverages.

Société Mondiale du Vin provides a means for a mutual sharing among those who appreciate fine beverages as part of the Chaîne dining experience as well as those professionals who are beverage oriented.

The membership of Société Mondiale du Vin is comprised of Chaîne members who are professionally involved in the wine and spirit industry or are amateur connoisseurs with special knowledge or interest in wine and crafted beverages, and who are dedicated to promoting the education and enjoyment of them as a vital part of the dining experience.

More information about the Société Mondiale du Vin can be found here”Grand Chapitres”, events when members are inducted, are three days social and educational events that culminate in the induction of new members. Chapitres are similar events but are less than three days in duration, and new members are also inducted during these events. Our Baillis Délégués and their teams put a great deal of time and energy into organizing these Grand Chapitres and Chapitres, major Chaîne celebrations which provide members with the ideal opportunity to visit Bailliages in other countries, to meet new people and fellow Confrères, as well as get inducted.
